Amazing Oatmeal Apple Crisp Recipe


This recipe was created based on a Weight Watchers recipe, but I have since doubled the ingredients and made some slight changes, which officially means there is probably no nutritional value and won't help you lose weight whatsoever. {Hence, the word "Amazing" in the title of this post!}

{From here on out, we will be referring to Apple Crisp as "AC". 
Gotta get with the Richard's family lingo.}

Ingredients:

1C whole wheat flour {regular flour works too}
1-1/2 C quick cooking rolled oats
1-1/2 C unpacked brown sugar
1-1/2 tsp cinnamon
1 C lite butter {regular butter works too}
6 C peeled apple slices
1/2 C dried cranberries {not necessary in my opinion!}

Directions:

1. Preheat oven to 375 degrees.
2. Mix flour, oats, 3/4 C brown sugar, 3/4 tsp cinnamon {preferably with a Kitchen Aid blender or some sort of automatic mixing device}.
3. Cut in chilled butter. Mix until oat mixture resembles coarse meal.
4. Make your husband {or significant other, roommate, BFF... anyone who is around to rope into doing this task for you} peel all of the apples. I used 6 and assumed about a cup each. The more, the merrier though.
5. Mix apples, cranberries, 3/4 C brown sugar and 3/4 tsp cinnamon in bowl until apples are covered.
6. Pour apple/cranberry mix into a 13" x 9" baking pan coated w/ cooking spray {or not, if you forget like I did}.
7. Sprinkle oat mixture over the apples until evenly covered.
8. Bake at 375 degrees for 30 minutes or until apples are tender.

...30 minutes later...

You now have this big pan full of AMAZING AC sitting in front of you. It's time to make this look totally adorbs. {Remember, presentation is key.}

I pulled out some polka dotted baking cups and scooped the AC into them. Tricked ya, huh? You thought I baked them in the cups at first, right? I decided to scoop them in after because I wanted all of the apples to bake together and become tender and juicy.

I happened to be making this as a get well gift for my mom, so I decided to add little Washi Tape flags using toothpicks and tape.
